Double Chocolate Walnut Biscotti


Here is my famous biscotti recipe that you all have been glomming down at the Trade Shows!

DOUBLE CHOCOLATE WALNUT BISCOTTI

2 Cups all purpose flour
½ Cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
¾ stick (6 Tablespoons) unsalted butter, softened
1 Cup granulated sugar
2 Large eggs
1 Cup walnuts, chopped
¾ Cup semisweet chocolate chips

Preheat oven to 350 degrees and butter and flour a cookie sheet. ( I just use parchment paper and eliminate that step)

In a bowl whisk together flour, cocoa powder, baking soda, and salt. In the bowl of an electric mixer beat butter and sugar together until well combined. Add eggs and combine well. Stir in flour mixture to form a stiff dough. Stir in walnuts and chocolate chips.

On prepared cookie sheet with floured hands, form dough into 2 slightly flattened logs, each 12 inches long and 2 inches wide.

Bake for 35 minutes. Be careful not to burn the bottoms! Cool the logs on a cookie rack for 10 minutes.

Slice each log into 1 inch slices. Then put the cookies onto the cookie rack and put that rack onto the cookie sheet. Lie the cookies on their side.

Bake the cookies for another 10 minutes. Cool completely.
